But really…What About Waffles?

Waffles are having their moment in the spotlight thanks to a new food truck in the Midland area.

Desiree and David Achorn are serving up some amazing waffles for the Midland community in their new food truck, ‘What About Waffles.’ “I love that we’re doing something new. We’re mixing it up,” says Desiree.

“I always knew I wanted a restaurant, and the food truck world is kind of the stepping stone,” says Desiree as she sat chatting with me over coffee while sporting her waffle earrings. When the couple originally thought about the food truck idea, they were thinking more along the lines of tacos. Eventually they settled on waffles when David asked, “What About Waffles”? Desiree thought it was perfect. “It answers your question, ‘what are we doing for dinner tonight?’”

The truck debuted with a soft opening in April and has since made appearances at the Midland Farmer’s Market, Corteva Agriscience, Grace A. Dow Memorial Library, Mid Michigan Health, Independence Village, and more.

The truck offers various types of waffles in different variations. If you want to order, it's important to understand your options. What About Waffles offers two types of waffles: the Brussels and the Liege. According to the menu, the Brussels waffle is a traditional, lightly sweetened, yeast-leavened batter that is pressed until perfectly golden. The Liege waffle is a sweet, buttery brioche style dough with clusters of Belgian pearl sugar that caramelize the waffle when pressed.

Their best seller is the Strawberries and Cream on a Liege. The waffle is topped with fresh-cut strawberries, cream cheese and maple syrup drizzle, whipped cream, and graham cracker crumble, with a dusting of powdered sugar.

Although Strawberries and Cream is the best seller, Desiree’s favorite is the Blueberry-Lemon waffle. It is served on your choice of waffle, topped with tangy lemon curd, whipped cream, fresh blueberries, a sprinkle of lemon zest, and dusted with powdered sugar. David’s favorite depends on how he feels that day.

Other waffle menu items include the Blueberry Pie, Apple Pie, Cherry-Almond, Boston Crème, Nutty Bacon and S’mores. In addition to all of these, you can create your own or try the Monte Cristo, a liege waffle, split and stuffed with turkey and/or ham, swiss cheese, and homemade raspberry syrup and dusted with powdered sugar.

Desiree and David pride themselves on the fact that everything they serve is homemade. From the waffles to the sauces, the duo spends their time prepping for meals by sourcing local food, like blueberries from Backwoods Blueberries in Hemlock. They take the time to make sure ingredients are the highest quality they can be. “I want you to love your food,” Desiree says.

Many Midlanders, including area businesses, are flocking to What About Waffles to fill their tummies with the yummy handmade waffles. Desiree and David run into many people from their past, including former coworkers, teachers, and friends. Desiree says, “It’s filling me up!”
