Doncker's expands candy staff to meet demand, create original products

The folks over at Doncker's are pretty darn serious about their candy.

The company, which has been in operation in Marquette for more than 100 years, has taken pride in its famous fudge for quite some time, but recently it has made moves to increase its in-store candy creations. To that end, the company has hired two candy makers in Akasha Morherudaen and Katie Thompson. The focus is to not only create more Doncker's originals, but to allow a wide freedom in the creativity of the candy being made.

"We want them to be able to experiment and come up with their own creations," says Shane Baker, executive chef at Doncker's. "The fudge and the caramels they are making are already a big hit. Now they're experimenting with their own truffles and are creating their own variations of chocolate bark."

The candies are available both in the store, which is located on Washington Street in downtown Marquette, or online.

The candy makers haven't taken long to get the attention of the public, either. They recently took first place for presentation at a Chocolate Festival held at Upfront & Co. late last month.

"We wanted people who had a passion for making chocolate," says Baker. "We definitely found two great candy makers in Katie and Akasha. Basically their only limit is going to be their imagination."
