Shawn Grischke doesn’t have to travel very far to get fresh ingredients for his new restaurant. A quick stroll and Grischke, co-owner of Wrapin-N-Rollin, can find much of what he needs for his made-to-order wraps right where he's at.
That’s the benefit of opening in City Market, the home for the new restaurant as of late 2018. And though it wasn’t his initial vision for his specialty wraps, Grischke and company have found that they fit in quite well at the downtown vendor space.
Initially dreamt up as a food truck concept, Wrapin-N-Rollin found a more permanent home when its owners realized they were about $80,000 short of purchasing a mobile kitchen. So it was serendipity when they happened across the City Market space.
"We’re getting a lot of repeat business, serving all of downtown Bay City," Grischke says.
"We’ve got a pretty great following already."
That repeat business is coming for both made-to-order and specialty wraps. Diners can customize their wraps or can order from Grischke’s unique take on the wrap genre.
Specialty wraps include a Reuben, Philly Steak, Chicken and Waffles, and more. Customers can order their wraps as salads, as well. Homemade Deli Chips, dip, coleslaw, and hummus round out the extras.
When thinking up the business, Grischke took the wrap-making skills he learned from working at a number of restaurants and figured he’d try his own take. He says he’s worked in restaurants everywhere from Fort Myers Beach in Florida to Michigan’s Drummond Island.
"I’ve been all over the place," Grischke says. "I always wanted to open my own business. I decided to go in with both feet this time."
His food truck dreams might still materialize, saying he’d like to one day maybe keep employees working at the Bay City location while he drives the food truck to sell wraps in Florida.
Probably in winters like this.
Wrapin-N-Rollin is located in City Market at 401 Center Ave. in downtown Bay City.
